![]() Depending on the season and the freshest salmon available, Canlis serves Copper River Kings, Yukon River Kings, other wild and troll caught pacific kings, and farm raised kings from Creative Salmon Company Ltd. in Clayoquot Sound, British Columbia. While Canlis is always sourcing from a multitude of vendors, one reliable source is Harry Calvo at the Pure Food Fish Market in Pike Place. He began selling fish to Canlis in the 70's, and is one of Seattle's best seafood resources. |

Today, Canlis serves the virginica from Taylor Family Shellfish, a fourth generation family owned company who has won countless awards for taste, sustainable aquatic agriculture, and caring for Puget Sound. |

![]() The Casi Cielo story: In 2003 the largest coffee company in the world came to a small, family run business to learn how to create a coffee for the finest restaurants in America. Canlis recommendation was simple: it must be socially and environmentally responsible, it must be the absolute best roast in town, it must pair with classic desserts such as lava cake and crème brulée. In the months that ensued, Starbucks focused on a program for sustainable agriculture and suggested a single source coffee called Casi Cielo. Grown by four families, each generations old, Casi Cielo embodied everything we were looking for: sustainability, fair trade, world-class flavor. Soon, a new Starbucks coffee was born. Today, Casi Cielo is the second most popular specialty coffee Starbucks offers (after Christmas blend!) and is only available the first couple months of every year. ![]() Olsen Farm Potatoes - We found Brent at the Pike Place Market and started a relationship. He personally delivers potatoes to our restaurant. Every fall and winter we have his product in the restaurant. He grows around 30 different types of potatoes, of which we get about 15 mixed together. |
